German cockroaches in Saskatchewan restaurants: how they spread and how to stop them

A line cook in a Weyburn kitchen flips the light on at 5:45 a.m. and sees three small brown roaches scatter behind the prep table. That's a German cockroach (Blattella germanica) sighting, and in a commercial kitchen it's never a single incident. A female German roach produces an ootheca with 30–40 eggs every three to four weeks; the population doubles roughly every six weeks when it's well-fed and warm. The kitchen is well-fed and warm. The clock is already running.

Two sightings reported by the closing crew in a single week, scheduled monitoring program already in place, after-hours treatment that same week, zero callbacks for over a year. The protocol that gets that result is specific and tightly sequenced.

How they arrive

German cockroaches don't fly in from outside. They almost never travel between buildings on their own — the species is essentially a permanent indoor commensal in Saskatchewan's climate. They arrive in:

  • Cardboard delivery cases — produce, dry goods, paper supplies. The corrugation of a banana box is the single most common vector we trace.
  • Used kitchen equipment — a deep fryer, a prep table, a reach-in cooler bought from a closing restaurant. Egg cases survive transport easily.
  • Employee bags and aprons — rare but documented, usually when an employee's home is infested.
  • Linen deliveries — uncommon if the linen service is reputable; common if it's not.

The first defence is the receiving dock: break down cardboard immediately, never let banana boxes overnight in a dry-storage area, and dispose of corrugated outside the building before close.

Where they harbour

In a typical SK restaurant kitchen, the eight harborage points we find roaches in, in order of frequency:

  1. Inside the motor compartment and door gasket of the reach-in cooler
  2. Behind and underneath the dishwasher (warmth, moisture, food residue — the trifecta)
  3. Cabinet hinges and drawer slides on the line
  4. Wall void behind the grease trap, especially if the trap seal is degraded
  5. Inside hollow tubular shelving and table legs (drill holes in the bottom of every leg)
  6. Behind the menu-board electrical box (warm, dry, undisturbed)
  7. Beverage gun holsters and soda lines at the server station
  8. Mop sink chase and floor-drain cavities

A flashlight inspection at 11 p.m. with the line cooled down catches what a daytime walk-through misses by a factor of ten.

The after-hours protocol

For a working kitchen the treatment has to fit the cleaning schedule. Our standard sequence for a Saskatchewan restaurant:

Visit 1 (after close, around 11 p.m. — 2 a.m.):

  • Pre-treatment inspection with the kitchen cooled, lights low, flashlight only
  • Harborage map drawn directly onto a kitchen floor plan
  • Gel bait placement in concealed harborages — never on food-contact surfaces, never visible from the cooking line
  • IGR aerosol or point-source disc in stockroom voids, behind cooler motors, in floor-drain chase
  • Crack-and-crevice work along cabinet hinges, shelving legs, and equipment seams
  • Photographic report drafted on-site

Day 14 follow-up (also after-hours):

  • Bait replenishment at active stations
  • Re-inspection of original harborage points
  • Re-treatment of any new activity
  • Report uploaded to the property's food-safety binder portal by 9 a.m. the next morning

Day 28 follow-up (after-hours):

  • Final inspection
  • Transition to monthly monitoring if the property is on a recurring contract

The reports are formatted for SK food-safety inspection binders — license number, product registration number, application sites, signatures. That's what makes the difference at a health-authority audit.

What doesn't work in a restaurant

  • Bombs and total-release foggers. They scatter roaches into voids you can't reach and contaminate every food-contact surface in the building. Health-authority violation in most cases.
  • Boric acid on the floor. Some efficacy in residential, near-zero in a commercial kitchen because the floors are washed every night.
  • Pyrethroid surface sprays on prep surfaces. Regulatory non-starter. We never spray prep surfaces.
  • One-and-done treatments. Without the day-14 and day-28 visits, the IGR cycle isn't long enough to break a multi-generation population.

Why the IGR matters

The single most common reason a restaurant treatment "doesn't work" is that the operator skipped the second visit. Gel bait kills the adults you can see at week one. The egg cases in the wall void hatch over the next 30 days. Without an IGR and a follow-up bait refresh, that second generation establishes a new harborage and the cycle restarts. The Day 14 + Day 28 follow-up sequence isn't optional — it's the reason the Weyburn account went 12 months without a callback.
